Variation #1:

  • 2 papayas very ripe
  • 3 cups  coconut yogurt
  • 1 cup raspberries
  • 1 cup blueberries
  • 3 tbsps chia seeds

  • 2 papayas very ripe
  • 3 cups  coconut yogurt
  • 2 cups blueberries
  • ½ cup coconut flakes unsweetened and lightly toasted
  • 3 tbsp chia seeds

Variation #3

  • 2 papayas very ripe
  • 3 cups coconut yogurt
  • 3 tbsps chia seeds
  • 2 cups mixed berries (raspberries, blackberries, blueberries)
  • ½ cup  coconut flakes  unsweetened and lightly toasted

Instructions

  • Slice each papaya in half lengthwise. Scoop out the seeds with a large spoon and discard.
  • Divide the coconut yogurt equally between the papaya halves and top with the raspberries, blueberries, and chia seeds. Serve immediately and enjoy!

What is Coconut Yogurt Made Out of?

Coconut milk is a non-dairy liquid made like other nut kinds of milk, such as cashew or almond milk. It results from the pulverized flesh of coconuts combined with water. It has a somewhat heavier texture than regular whole milk (for thicker coconut yogurt, use just the coconut cream that comes to the top).
